A cellar built for tasting, not storage
The cellar holds 1,400 labels with deliberate depth: Australian regions from Yarra to Margaret River, a serious Burgundy and Barolo section, and a back-vintage shelf reserved for tastings. The climate room sits at 14°C and 70% humidity, monitored around the clock.
Head Sommelier Ines Duarte leads daily tastings — regional flights, verticals, blind sessions — in a stone-walled room seating twelve. Private cellar dinners for up to ten can be arranged with the kitchen.

An evening below the lobby
The tasting room sits beneath the lobby, walled in stone and held at cellar temperature — jackets provided for the unprepared. Flights arrive in sequence, each wine introduced with the story of its maker and its region.
The signature session is the Australian Icons flight: six glasses tracing the country's regions from cool-climate chardonnay to Barossa shiraz, with the sommelier's map and her disagreements with the critics.

Every bottle on the shelf is for sale; favourites are shipped or sent to your suite for the rest of the stay.
